Yep, they stick to ferrous steels, but stainless is a face-centered cubic structure where the ferrous molecules are protected by an alloy (usually chromium) that shields it, making it non-magnetic. There must be alternative alloys used that don't do that, that's all I can figure. There are probably lots of new things in that field since my metallurgy days!

I think even scratches would just give that floor character.
