I call all baby birds "chicks," but the special term for baby turkeys is "poult." The breeding display involved "fanning" the feathers (I haven't found a more technical term) a special gait called strutting, and a special call: the gobble. (Gobbling is the loudest of the over 25 different vocalizations of turkeys.)
