You've pretty much got it: it conveys information about her age, health, sex, etc. to other turkeys. It's rare but not unheard of for a hen to have a beard. That's how she ended up with a male name.

I find I'm getting a few under my chin Tito and i just pull them out, but on you it works. Seriously. You strut hunny!
