I love Tito! Is there an evolutionary signifigance to the beard? Is it to attract a mate or something? My turkey knowledge is non existant.

You've pretty much got it: it conveys information about her age, health, sex, etc. to other turkeys. It's rare but not unheard of for a hen to have a beard. That's how she ended up with a male name.
